Brinner: Dairy Free Chicken & Egg Omelet Edition

Who doesn't love breakfast for dinner? I can't say that I know a single person who would turn down a good old fashioned "brinner." This weekend was chaotic and overwhelming in all the best ways, so when Sunday night rolled around, I was looking for something quick, easy, and wholesomely comforting for dinner.

With a dozen eggs in the refrigerator and a package of chicken that needed to be cooked, I decided that I was long overdue for a savory omelet. With so many allergies, I cannot have a lot of the typical "add-ins," so I turn to fresh herbs to season my dairy free chicken and egg omelet.

Ingredients

  • 2 large eggs

  • Chicken (to your liking)

  • Sea salt

  • Pepper

  • Basil

Instructions

  1. Prepare baked chicken

  2. Trim fat off chicken breast and slice into cutlets

  3. Season with pepper and sea salt on both sides

  4. Bake at 400 degrees until cooked through, flipping cutlets every five minutes

  5. Some people have expressed disbelief at that fact that I cook my chicken at 400 degrees as opposed to 350, but I have found that cooking it at the higher temperature and frequently flipping actually leads to a juicier chicken breast (Note that cooking time will vary based on how thick you slice your chicken breasts)

  6. Once cooked, dice chicken

  7. Spray a frying pan with cooking spray (I use soy-free Vegalene Buttery Delite, which doubles as a non-stick spray and a butter-flavored seasoning spray)

  8. Heat over medium-high heat until "flicking" water into the pan sizzles

  9. Whisk two large eggs in a small bowl, and then pour into heated skillet

  10. Reduce heat to medium

  11. Add diced chicken to one half of the eggs

  12. Season by generously sprinkling sea salt, pepper, and basil

  13. When eggs start to bubble, use a spatula to carefully fold the half without chicken onto the half with the chicken, allowing uncooked eggs to flow between the setting edges

  14. Cook for a minute and flip, continuing until both sides start to turn golden

  15. Transfer to plate and enjoy your mouth-watering dairy free chicken and egg omelet!
