Gluten Free Pizza - Sicilian Style

If you've read my bio or some of my previous posts, you probably know that I'm a gluten free Italian girl trying to manage a laundry list of food allergies and my dad's native cuisine (a grand feat to say the least). Due to my numerous, conflicting allergies, I often cannot eat pre-made gluten free breads or crusts. In fact, most mixes are not safe for me either. Because of this and my intense desire, scratch that...NEED for gluten free pizza (just ask my cousin - we are obsessed!), I decided to try my hand at a made-from-scratch gluten free pizza in the thick crust Sicilian style of what my dad would call "the homeland."
To clarify, traditional Sicilian pizza is rectangular with a thick crust. So this pizza dough recipe will consist of mixing ingredients, allowing the dough to rise, baking without toppings (to allow for further rising), and then adding toppings and baking again. In contrast to the typical crispy, thin, and bland crusts of gluten free pizzas, this crust comes out thick, and fluffy, meeting all of your Sicilian style texture expectations, and exceeding in the taste category! A perfect "10" for your gluten free Italian dinner night!

Ingredients
1 package yeast
2 cups gluten free flour (I used Bob's Red Mill Gluten Free 1-to-1 Baking Flour)
1/2 tsp salt
1/2 tsp sugar
1-1/4 to 1-1/2 cups warm water
Instructions
Preheat oven to 425 degrees
Grease a cake pan (I used a 9x13 sized pan and Vegalene Buttery Delite Spray)
Using your electric mixer bowl, combine the water, sugar, salt, and yeast
Let stand for five minutes as the yeast activates
Add in the flour and beat for 3 minutes on high speed
When done, you should have a thick, creamy batter. Don't worry, it is supposed to be much wetter than your typical pizza dough.
Pour batter into prepared pan and spread until smooth.
Let rest for 20 minutes and then bake for 35 minutes or until the crust is lightly browned and has risen.
Add sauce, cheese, and other toppings as desired.
Lower heat to 350 and bake for an additional 15 - 20 minutes. Your gluten free pizza is done when the cheese begins to bubble and brown.
