Gluten Free Waffles

It has been quite a few days since my last post, but I just got a new job and have been wicked busy lately! In honor of Waffle Wednesday (self-proclaimed holiday here!), I am going to share with you a simple, three ingredient recipe for gluten free waffles that are virtually allergy free (sorry folks with egg allergies - although an egg substitute would be suitable for this recipe as well!).

Using just bananas, eggs, and cinnamon, you too will be able to create fluffy, gluten free waffles that have soft texture, somewhere between a pancake and a traditional waffle. As an added bonus, these ingredients create a gluten free waffle that is high in both protein and potassium when compared to its "regular," gluten-filled counterpart. So tie your apron on and break out the whisk. In merely minutes, you'll have a delectable gluten free breakfast (or brunch or brinner - breakfast foods are perfect for every meal, am I right?!).

Gluten Free Waffle Ingredients

Ingredients

  • 1 medium banana

  • 2 eggs

  • 1/8 tsp cinnamon

Instructions

  1. Preheat your waffle iron

  2. Add all ingredients to a small bowl, and mix thoroughly (you may want to whip your eggs and mash your banana separately and then blend)

  3. Pour the gluten free waffle batter into the iron and cook until desired darkness (I set my iron to "dark" and cook until the timer goes off).

  4. Bask in excitement as you watch the top of the waffle iron rise due to your waffle getting fluffier and fluffier!

  5. Voila! When the timer goes off, garnish with your favorite toppings and enjoy your allergy friendly, gluten free waffles!
